Greens & Shitake Stir-fry


Ingredients:

  • 1 tablespoon toasted sesame oil

  • 2 cloves garlic, minced

  • 1 small onion, halved and sliced thin

  • 1 (7 ounce) can water chestnuts, drained and thinly sliced

  • 5+ shiitake mushrooms, sliced (if using dried, soak, discard the stems and slice); other mushrooms may be substituted

  • 1 bunch bok choy

  • 1 bunch kale, washed and cut into large pieces

  • 1 teaspoon mirin (or seasoned brown rice vinegar)

  • 2 teaspoons coconut aminos or tamari (or high quality soy sauce)

  • Freshly ground black pepper, to taste

  • Crushed red pepper flakes (optional)

  • *Add in other vegetables to your liking such as bell pepper, snow peas, carrots, etc

  • *Add a protein source such as beef or chicken to create a complete meal

Instructions:

  1. Heat oil in a large skillet over medium high heat.

  2. Add onions and sauté until onions are translucent (about 5 minutes).

  3. Add garlic and sauté 1-2 minutes more.

  4. Add any other desired veggies and sauté until almost tender.

  5. Add water chestnuts and shiitake mushrooms and sauté for for 2-3 minutes.

  6. Add kale and bok choy.

  7. Add mirin, coconut aminos/tamari and pepper and continue cooking until greens are wilted.

  8. Season with black pepper and red pepper to taste.
